This is a spicy, simple, and delicious recipe for grilled corn from our friends (and market vendors) at Rose City Pepperheads. For this particular recipe, they recommend using the Rage n' Red Jalapeno jelly, or the Mango Madness Pepper jelly.
There's a lot of fresh, ripe corn available at the market currently, so be sure to pick up some corn this weekend, along with a jar of pepper jelly!
GLAZED GRILLED CORN:
Ingredients: 4-6 ears of corn, shucked 1/2 cup Rage n' Red Pepper Jelly 1/4 cup melted salted butter
Instructions: 1. Mix pepper jelly with the melted butter. 2. Baste ears of corn with jelly mixture. Wrap each ear in foil. 3. Grill for 10-15 minutes, turning each ear occasionally. 4. Enjoy!
