COOKBOOK SIGNING: Elias Cairo of Olympia Provisions On Saturday, we are pleased to have Elias Cairo -- founder and chief charcuterie-maker of Olympia Provisions - at the Market! Elias will be sampling various salamis and sausages, and will be selling and signing copies of his Olympia Provisions cookbook at the market from 9-12 on Saturday. (It should go without saying that this book would be a perfect Father's Day gift for the special dads in your life!) If you've ever wanted to make your own homemade sausage, cured meats, or paté -- look no further. This book is an incredible resource and an in-depth look at the wonderful world of charcuterie. As a special preview of the book, we are sharing a recipe for Parsley and Pecorino Sausage below. We are excited to try our hand at making sausage, as this looks like an awesome recipe.
